As many of you know, I am a vegetarian with a strong lilt toward the vegan side of things. Whether you are vegetarian, vegan, or the most meat-eatingest person alive, the food I make still tastes good, so try out some of these if you want!

my mom sent me this one. Most of the ingredients are things I already have around, anyway, and it doesn’t take much time or effort to prepare this! Instant classic!
Creamy Chickpea Soup with garlic and lemon
4 large garlic cloves, minced
2 tbsp olive oil
2 15-19 oz cans chickpeas (also known as garbanzo beans)
juice of 1 lemon
1 tsp dried oregano
1 tsp salt
1/4 tsp crushed red pepper
~1~ c water
2-3 tbsp chutney
toasted sesame seeds or crumbled feta (optional)
In a large saucepan over medium-high heat, cook garlic in oil until golden (3-5 min). Add chickpeas with their liquid and heat through. Add lemon juice, oregano, salt, and red pepper. Simmer for 10 min. Put mixture in a blender and blend till smooth. Return to the pan, stir in water, and heat through. Add watter to achieve desired consistency. Serve in warm bowls, stirring in a little chutney and sprinkling seeds of feta.
